Parmentier Potato Side

  • 1 kg Maris Piper potatoes or similar, cut into 2cm cubes
  • 4 bashed garlic cloves
  • 2 sprigs of rosemary, leaves finely chopped
  • 4 tbsp veg oil
  • Tip the cubed potatoes into a pan of salted water, and bring to the boil. Immediately drain and leave to steam-dry. Heat the oven to 220C, and tip the potatoes onto a baking tray with the oil, rosemary and garlic, and plenty of seasoning. Mix thoroughly, then roast for 35 mins - turning half way - until golden and crisp. Serve with roast lamb, duck, or beef as an elegant alternative to chips or mash.
