Parmesan Grilled Scallops

  • 12 scallops in the half-shell
  • 1 tbsp melted butter
  • 1 grated garlic clove
  • 120g grated parmesan
  • 2 limes, juice only
  • Chopped coriander
  • Preheat the grill to medium. Place the scallop shells with the meat inside on a baking tray. Mix the butter with the garlic and a pinch of salt and pepper, then brush this mixture liberally across the scallops.
  • Scatter the parmesan over the buttered scallops, then grill for 5-10 mins or until sizzling and golden. Sprinkle with lime juice and serve with a sprinkling of chopped coriander.
