Parmesan Potato Skins
- 4 baking potatoes
- 1 tbsp olive oil
- ½ tsp cayenne pepper
- ½ tsp smoked paprika
- ½ tsp salt
- 2 tbsp grated parmesan
- Heat your oven to 180C, and bake your potatoes for about 50 minutes. Once they’re cooked, allow them to cool slightly, and then scrape out about 75% of the middles, leaving at least a centimetre of potato inside the skins.
- Cut each skin into thirds, and then toss onto a baking tray and sprinkle all over with the cayenne pepper, paprika, salt, and olive oil, before generously covering with the parmesan. Bake for a further 15 minutes, until crisp and golden. The perfect sharing starter!
