Parmesan Roast Scallops

  • 12 scallops, roe removed
  • 50g grated parmesan cheese
  • 1 tbsp chopped chives
  • Salt and pepper
  • 50ml groundnut oil
  • Preheat the oven to 220C. Heat the oil in a large frying pan on a high heat. Season the scallops with sea salt and cracked pepper, and top each one with grated parmesan and some chives. Sear the scallops in the oil - don’t flip or turn them - for 30 seconds, then transfer the pan to the oven. Roast for 3 mins, then serve immediately with a green salad.
