Pea and Mint Chilled Soup
- 1 tbsp olive oil
- 6 spring onions, sliced
- 2 chopped garlic cloves
- 1 rasher of streaky bacon, fried and chopped (optional)
- 500ml veg stock
- 675g frozen peas
- 1 lettuce, chopped
- Large handful of mint, chopped
- Salt and white pepper
- Cream, to serve
- Heat the oil in a pan, add the onions, garlic, and bacon and cook for about 5 minutes. Pour in the stock and add the peas, then simmer for a couple of minutes before adding the lettuce.
- Simmer for 3 minutes, then blend with a hand blender until smooth. Season to taste, and then pour into a large bowl and allow to chill overnight. Serve the next day with a dollop of cream and some extra mint leaves as a garnish.
