Pea and Mint Chilled Soup

  • 1 tbsp olive oil
  • 6 spring onions, sliced
  • 2 chopped garlic cloves
  • 1 rasher of streaky bacon, fried and chopped (optional)
  • 500ml veg stock
  • 675g frozen peas
  • 1 lettuce, chopped
  • Large handful of mint, chopped
  • Salt and white pepper
  • Cream, to serve
  • Heat the oil in a pan, add the onions, garlic, and bacon and cook for about 5 minutes. Pour in the stock and add the peas, then simmer for a couple of minutes before adding the lettuce.
  • Simmer for 3 minutes, then blend with a hand blender until smooth. Season to taste, and then pour into a large bowl and allow to chill overnight. Serve the next day with a dollop of cream and some extra mint leaves as a garnish.
