Pea, Goats’ Cheese and Mint Salad
- 200g garden peas
- 1 long red chilli, deseeded and finely chopped
- 1 garlic clove, finely chopped
- 1⁄2 lemon, juice only
- 1⁄2 tbsp olive oil
- Salt and pepper
- 100g quality soft goats’ cheese
- Handful of torn mint leaves
- Cook the peas in boiling salted water for a minute or two, then drain. In a large bowl, mix the peas, chilli, garlic, lemon juice, and olive oil. Season with salt and pepper.
- Break up the goats’ cheese into small chunks, and sprinkle it over the peas mixture. Sprinkle the mint leaves over the top, and then carefully stir to combine.
