Pea, Goats’ Cheese and Mint Salad

  • 200g garden peas
  • 1 long red chilli, deseeded and finely chopped
  • 1 garlic clove, finely chopped
  • 1⁄2 lemon, juice only
  • 1⁄2 tbsp olive oil
  • Salt and pepper
  • 100g quality soft goats’ cheese
  • Handful of torn mint leaves
  • Cook the peas in boiling salted water for a minute or two, then drain. In a large bowl, mix the peas, chilli, garlic, lemon juice, and olive oil. Season with salt and pepper.
  • Break up the goats’ cheese into small chunks, and sprinkle it over the peas mixture. Sprinkle the mint leaves over the top, and then carefully stir to combine.
