Peach, Basil and Mozzarella Salad
- For the Dressing
- 3 tbsp olive oil
- 1 tbsp balsamic vinegar
- 1 tsp mustard
- Salt and pepper
- For the Salad
- 2 tsp olive oil
- 4 quartered peaches
- 200g mozzarella, torn
- 70g rocket leaves
- 1 bunch of basil, leaves
- Whisk together the dressing ingredients in a small bowl and set aside. Lightly grease a griddle pan and griddle the peaches for 2 mins to char, then lay onto a sharing platter. Scatter with chunks of mozzarella, the basil leaves and the rocket, then season and drizzle over the dressing. Perfect!
