Perfect Beef Kofta
- 800g beef mince
- 100g chopped green olives
- 60g chopped walnuts
- 50g raisins
- ½ red cabbage, shredded
- 2 lemons
- Bunch of chopped parsley
- 2 tbsp olive oil
- 4 warm flatbreads
- Handful of pickled green chillies
- 1 sliced cucumber
- Chuck the mince, walnuts, olives and raisins into a bowl and season well. Mix to combine, then divide into 8 portions and shape around a metal skewer. Toss the cabbage with the juice of a lemon, almost all the parsley, 1 tbsp of olive oil and some seasoning.
- Brush the koftas with oil and grill for 3-4 mins on each side, or until cooked through. Arrange onto flatbreads with the cabbage, pickles and cucumber. Squeeze over some lemon, and serve with a scattering of parsley.
