Perfect Beef Kofta

  • 800g beef mince
  • 100g chopped green olives
  • 60g chopped walnuts
  • 50g raisins
  • ½ red cabbage, shredded
  • 2 lemons
  • Bunch of chopped parsley
  • 2 tbsp olive oil
  • 4 warm flatbreads
  • Handful of pickled green chillies
  • 1 sliced cucumber
  • Chuck the mince, walnuts, olives and raisins into a bowl and season well. Mix to combine, then divide into 8 portions and shape around a metal skewer. Toss the cabbage with the juice of a lemon, almost all the parsley, 1 tbsp of olive oil and some seasoning.
  • Brush the koftas with oil and grill for 3-4 mins on each side, or until cooked through. Arrange onto flatbreads with the cabbage, pickles and cucumber. Squeeze over some lemon, and serve with a scattering of parsley.
