Perfect Prawn Tagliatelle

  • 1 tbsp olive oil
  • ¼ finely chopped onion
  • 1 crushed garlic clove
  • 150ml double cream
  • 100g cooked peeled prawns
  • 1 sliced spring onion
  • 100g cooked tagliatelle
  • 2 tbsp chopped parsley
  • 1 egg yolk
  • ½ lemon, juice only
  • Fry the garlic and onion for 4 mins in the oil, then stir in the cream, season well and cook to reduce for 3 mins more.
  • Stir in the spring onion and prawns, then add the cooked tagliatelle to the pan and season a little more if necessary. Stir well to coat, then heat for 2 mins and add the egg yolk, parsley and lemon juice. Stir to emulsify the sauce a little (add some cooking water if necessary), then serve.
