Perfect Sardine Toasts

  • 8 sardine fillets
  • 1 tbsp flour
  • Sea salt and black pepper
  • Pickled red onion relish
  • 4 slices of sourdough
  • 1 tomato, sliced
  • Butter
  • Wholegrain mustard
  • Place the flour onto a plate, and season well. Coat the fish fillets in the seasoned flour, then fry in a little olive oil for a minute on each side.
  • Grill your sourdough bread, mix some softened butter with mustard and slather all over your toast. Top with slices of tomato, a pair of sardine fillets, and some pickled red onion. Delicious!
