Perfect Smoky Tomato and Salami Ragú
- 15 tomatoes, halved
- A glug of olive oil
- Small handful of thyme sprigs, leaves only
- 1 handful of basil leaves, torn
- Splash of red wine vinegar
- 1 handful of pitted black olives
- A few slices of salami, chopped
- Cooked pasta, to serve
- Preheat the grill. Place the tomatoes on a baking tray cut-side up, drizzle with oil and plenty of seasoning. Scatter with thyme leaves, and grill until a little blackened and smoky. Pour the tomatoes and their juices into a bowl and crush with a fork, then stir in the basil, vinegar, olives, and salami. Serve with cooked pasta.
