Perfect Smoky Tomato and Salami Ragú

  • 15 tomatoes, halved
  • A glug of olive oil
  • Small handful of thyme sprigs, leaves only
  • 1 handful of basil leaves, torn
  • Splash of red wine vinegar
  • 1 handful of pitted black olives
  • A few slices of salami, chopped
  • Cooked pasta, to serve
  • Preheat the grill. Place the tomatoes on a baking tray cut-side up, drizzle with oil and plenty of seasoning. Scatter with thyme leaves, and grill until a little blackened and smoky. Pour the tomatoes and their juices into a bowl and crush with a fork, then stir in the basil, vinegar, olives, and salami. Serve with cooked pasta.
