Perfect Spinach and Halloumi Salad

  • 250g halloumi, sliced thickly
  • 200g fresh spinach leaves
  • 2 oranges
  • 1 bunch of mint, leaves only
  • Griddle the halloumi slices for 3-4 mins on each side, or until golden and charred. Set aside, then tip the spinach and half the mint leaves onto a serving platter. Segment the oranges, and squeeze some of the juices into a bowl.
  • Scatter the orange segments over the spinach, chop up the remaining mint and mix with the orange juice, as well as a good splash of olive oil and some seasoning. Place the halloumi on top of the salad, and drizzle the dressing all over. Serve with warmed flatbreads - simple, but so gorgeous!
