Peri-Peri Prawns with Sweet Potato

  • 1 sweet potato
  • 2.5 tsp olive oil
  • 1 crushed garlic cloves
  • 1 red pepper, sliced into rings
  • Pinch of chilli flakes
  • ½ tsp paprika
  • 1 tbsp white wine vinegar
  • 1 tbsp ketchup
  • 100g king prawns, peeled and raw
  • Parsley, chopped
  • 2 tbsp mayo
  • Preheat the oven to 200C. Pop the potato on a tray and rub with oil and salt, then bake for 45 mins. Meanwhile, heat some oil in a pan and fry the pepper and garlic for 2 mins, then tip in the chilli, half the paprika, the ketchup, vinegar, 1 tbsp of water and the prawns. Bubble for 2 mins to cook, then stir through some parsley.
  • Mix the remaining paprika with the mayo. Split the softened, cooked potato down the middle and pile in the prawn mixture before dolloping the paprika mayo over the top. Scatter with some more parsley, and enjoy.
