Persian Spiced Kofte
- 400g lamb mince
- 1 shallot, chopped
- 1 crushed garlic clove
- 1 tbsp sumac
- 2 tsp garam masala
- 1 tsp each of salt and pepper
- For the Glaze
- 4 tbsp honey
- 4 tbsp pomegranate molasses
- ½ pomegranate, seeds only
- Preheat the oven to 180C. Mix together all of the kofte ingredients in a mixing bowl with your hands, until well combined. Divide into 16 equal portions, and roll into small sausage shapes. Place on a baking tray, and cook for 12 mins.
- Make the glaze by mixing the honey and molasses in a small pan, and heating gently. Remove the kofte from the oven, spear with a cocktail stick, and arrange on a serving plate. Lightly brush with the glaze and sprinkle with pomegranate seeds. Serve immediately with salads and flatbreads.
