Persian Spiced Kofte

  • 400g lamb mince
  • 1 shallot, chopped
  • 1 crushed garlic clove
  • 1 tbsp sumac
  • 2 tsp garam masala
  • 1 tsp each of salt and pepper
  • For the Glaze
  • 4 tbsp honey
  • 4 tbsp pomegranate molasses
  • ½ pomegranate, seeds only
  • Preheat the oven to 180C. Mix together all of the kofte ingredients in a mixing bowl with your hands, until well combined. Divide into 16 equal portions, and roll into small sausage shapes. Place on a baking tray, and cook for 12 mins.
  • Make the glaze by mixing the honey and molasses in a small pan, and heating gently. Remove the kofte from the oven, spear with a cocktail stick, and arrange on a serving plate. Lightly brush with the glaze and sprinkle with pomegranate seeds. Serve immediately with salads and flatbreads.
