Pesto Crusted Cod
- 75g green pesto
- 100g fresh breadcrumbs
- 1 lemon, zest only
- 4 x 250g cod fillets
- Broccoli and roast potatoes, to serve
- Preheat the oven to 200C. Combine the pesto, breadcrumbs and zest in a small bowl and season well. Place the cod fillets in a roasting tray - skin-side down - then slather with the pesto mixture. Pop in the oven for 10 mins, then serve with broccoli and roast potatoes, or a big pile of chips and salad.
