Pesto Crusted Cod

  • 75g green pesto
  • 100g fresh breadcrumbs
  • 1 lemon, zest only
  • 4 x 250g cod fillets
  • Broccoli and roast potatoes, to serve
  • Preheat the oven to 200C. Combine the pesto, breadcrumbs and zest in a small bowl and season well. Place the cod fillets in a roasting tray - skin-side down - then slather with the pesto mixture. Pop in the oven for 10 mins, then serve with broccoli and roast potatoes, or a big pile of chips and salad.
