Piquant Bean Pate
- 100g butter beans from a can, drained
- 1 tbsp wholegrain mustard
- 3 tbsp olive oil
- 1 tsp lemon juice
- Salt and pepper
- 2 slices of baguette
- 1 garlic clove, peeled and halved
- Tip the beans, mustard, oil, and lemon into a food processor, season well, and blend until smooth.
- Meanwhile heat up a griddle pan until smoking, and place the bread slices onto it. Griddle for 2 minutes on each side, then rub with the cut side of the garlic. Serve the toasted baguette topped generously with the pate.
