Plaice with Asparagus, Tomato and Potatoes
- 500g baby new potatoes, halved if large
- 2 tsp olive oil
- 150g cherry tomatoes
- 100g asparagus, trimmed
- 2 x 150g plaice fillets, dark skin removed if necessary
- ½ lemon, juice only
- Knob of salted butter
- Preheat the oven to 200C. Place the new potatoes in a roasting tin, drizzle with oil and seasoning, and roast for 25 mins. Remove from the oven and turn the potatoes, then nestle in the tomatoes and asparagus.
- Pop the fish fillets on top, squeeze over the lemon and top each fillet with a piece of butter. Cook for another 12 mins, or until the fish is cooked through. Serve immediately, with more lemon for squeezing.
