Plaice with Tamarind and Coconut
- 1 lime, juice only
- 1 crushed garlic clove
- 4 plaice fillets, skin removed
- Oil
- 2 chopped shallots
- 2 tsp paprika
- 2 tsp tamarind paste
- 200ml coconut milk
- Flour for dusting
- Handful of chopped coriander
- Mix the lime juice and garlic with some seasoning in a shallow dish. Add the plaice fillets, turn to coat, then leave to marinate for 10 mins. Heat a little oil in a frying pan and fry the shallots until tender. Add the paprika, tamarind and coconut milk, then simmer and cook gently for 10 mins.
- Dust the fish fillets with flour, then fry in a little oil for 2 mins on each side. Transfer the fish fillets to the coconut sauce, heat through and scatter with coriander. Serve with jasmine rice and pickles. Nice!
