Pomegranate and Orange Sorbet

  • 250g fine sugar
  • 300g pomegranate seeds
  • 200ml freshly squeezed orange juice
  • 1 lime, juice only
  • Dissolve the sugar in 250ml water in a small pan. Bring to the boil and simmer for 3 mins to slightly thicken, then remove from the heat. Blitz the pomegranate seeds in a food processor, then pass through a sieve into a large bowl - you want about 175ml of juice. Stir in the orange juice, lime juice and sugar syrup, then leave to cool before sticking in the fridge for an hour.
  • Pour the mixture into a freezer container and freeze for 24 hours or so. When ready to serve, whizz the mixture in a food processor and scoop into serving glasses, scatter with more pomegranate and enjoy!
