Porcini Sirloin
- 25g dried porcini
- 1 thyme sprig, leaves only
- 2 sirloin steaks
- 1 tbsp olive oil
- Chips, to serve
- Blitz the dried mushrooms to a fine powder, and mix with salt, pepper and the thyme leaves. Rub this mixture all over the steaks, then leave to chill overnight.
- Brush away any excess rub from the steaks. Heat a griddle pan until banging hot, smear some oil over each side of the steak and griddle for 3 mins. Turn over, cook for 2 more minutes (for medium rare), then leave to rest for 10 mins. Serve with chips and your favourite sauce.
