Pork and Mushroom Paprika Stew
- 1 tbsp olive oil
- 2 sliced onions
- 400g pork fillet, cut into strips
- 250g sliced mushrooms
- 1.5 tbsp smoked paprika
- 1 tbsp tomato puree
- 200ml chicken stock
- 100ml soured cream
- Brown rice, spaetzle or pasta, to serve
- Heat the oil in a pan and cook the onions for 10 mins, until golden. Add the mushrooms and pork and cook for 4 mins, or until browned all over. Add the paprika and cook for another minute.
- Stir in the tomato puree and pour in the stock. Simmer for 8 mins, then mix in the cream and plenty of seasoning. Serve with spaetzle for a traditional Germanic dinner, or replace with rice or pasta.
