Pork and Mushroom Paprika Stew

  • 1 tbsp olive oil
  • 2 sliced onions
  • 400g pork fillet, cut into strips
  • 250g sliced mushrooms
  • 1.5 tbsp smoked paprika
  • 1 tbsp tomato puree
  • 200ml chicken stock
  • 100ml soured cream
  • Brown rice, spaetzle or pasta, to serve
  • Heat the oil in a pan and cook the onions for 10 mins, until golden. Add the mushrooms and pork and cook for 4 mins, or until browned all over. Add the paprika and cook for another minute.
  • Stir in the tomato puree and pour in the stock. Simmer for 8 mins, then mix in the cream and plenty of seasoning. Serve with spaetzle for a traditional Germanic dinner, or replace with rice or pasta.
