Pork Chops with Creamed Leeks
- 4 thick-cut pork chops
- 2 tsp olive oil
- 2 leeks, sliced
- 300ml single cream
- 50g grated parmesan
- Chips, to serve
- Preheat the oven to 180C. Season the chops well, then fry in a pan for 3 mins on each side to colour. Transfer to a baking tray and cook in the oven for 10 mins, or until cooked through.
- Heat the oil in a frying pan and cook the leeks for 4 mins to soften. Add the cream, simmer for 1 minute, then mix in the parmesan and plenty of black pepper. Serve the pork chops with a pile of the creamed leeks and some chips or polenta chips on the side. Easy!
