Pork Island Curry

  • 2 tsp peanut oil
  • 1 chopped onion
  • 2 crushed garlic cloves
  • 2 tsp crushed ginger
  • 6 tsp curry powder
  • 500g sliced pork fillet
  • 350ml chicken stock
  • 120ml coconut milk
  • 1 lime, juice only
  • Rice or naan to serve
  • Heat the oil in a large frying pan and gently cook the ginger and garlic for 3 mins to soften. Stir in the curry powder, cook for a further minute, then remove everything from the pan and set aside.
  • Add the pork to the pan and cook for 10 mins to brown. Stir in the stock, garlic and ginger mix, coconut milk and some seasoning, then bring to a simmer and cook - covered - for about 15 mins. Stir in the lime juice, and serve immediately with rice or naan.
