Pork Loin with Mozzarella and Prosciutto

  • 4 pork loin steaks
  • 50g mozzarella, sliced into 4
  • 8 sage leaves
  • 4 slices of prosciutto
  • Salt and pepper
  • Preheat the oven to 180C. Place the pork steaks on a board and carefully make a slit horizontally into the non-fat edge of the steaks to create a pocket. Take a slice of cheese and 2 sage leaves, and push into the pocket. Season well and wrap each steak with a slice of prosciutto.
  • Heat the oil in a pan and seal the steaks on both sides. Remove from the pan and place on a baking tray, and cook for 20 mins in the oven until browned and cooked through. Serve with new potatoes and salad.
