Pork with Lentils and Apricots

  • 1 tbsp olive oil
  • 2 pork steaks
  • 250ml chicken stock
  • 80g dried apricots, halved
  • 400g tin of green lentils, drained
  • 2 tsp wholegrain mustard
  • 2 thyme sprigs
  • 1 tbsp thyme leaves
  • Heat the oil in a frying pan and cook the steaks for 5 mins, turning once. Add the remaining ingredients (except the thyme leaves), cover with the lid and simmer for 15 mins, stirring occasionally.
  • Remove the thyme sprigs from the pan and discard. Season the meat, sprinkle with thyme leaves and serve with steamed green beans.
