Pork with Sweet ‘n’ Sour Onions
- 600g pork fillet, cut into 4cm slices
- 2 tbsp ground black pepper
- 2 tbsp olive oil
- 1 red onion, halved and sliced
- 150ml white wine vinegar
- 75ml maple syrup
- Bunch of parsley, chopped
- Sprinkle the meat liberally with black pepper and some salt. Heat up 1 tbsp of oil in a frying pan, and sear the meat on both sides to brown. Remove from the pan, and chuck the remaining oil and onion in its place. Cook for 5 mins, then pour in the vinegar and reduce for a minute or two.
- Stir in the syrup, then return the pork slices to the pan until cooked through. Serve immediately with rice and a scattering of parsley, and with the sauce spooned all over.
