Portobello Mushroom and Halloumi Burger
- 450g sliced halloumi
- 1 tbsp olive oil
- 4 portobello mushrooms
- 4 burger buns
- 180g red pepper hummus
- 1 little gem lettuce, leaves separated
- Sweet chilli sauce
- Fry the halloumi on a griddle pan with the oil until charred and golden. Remove and keep warm. Grill the mushrooms on both sides for 4 mins, or until cooked and tender. Spread the hummus on the burger buns, add the lettuce leaves, then the mushrooms and finally the halloumi slices. Slather with sweet chilli sauce to finish, and serve - perfect!
