Portuguese Meatball and Butterbean Casserole
- 350g pork mince
- 2 tsp olive oil
- 1 red onion, chopped
- 2 red capsicums, sliced
- 3 crushed garlic cloves
- 1 tbsp smoked paprika
- 2 x 400g tins of chopped tomatoes
- 400g tin of butter beans or similar, drained
- 2 tsp sugar
- Bunch of parsley, chopped
- Season the pork well and work into small balls with damp hands, before frying in the oil for 5 mins to brown all over. Push to one side of the pan and chuck in the onion and capsicum, cook for another 5 mins, then add the paprika and garlic.
- Stir in the tomatoes and cover, then simmer for 10 mins. Remove the lid and stir in the beans, sugar, and more seasoning and simmer for 10 mins more, then scatter with parsley and serve with crusty bread.
