Portuguese Pork Skewers with Charred Tomatoes
- 3 lemons
- 500g pork tenderloin, cut into 32 chunks
- 4 crushed garlic cloves
- 1 tsp dried oregano
- 1 tsp each of cumin, coriander and turmeric
- 2 tsp smoked paprika
- 4 tbsp Greek yoghurt
- 16 bay leaves
- 16 picked chillies
- 3 thickly sliced red onions
- 3 thickly sliced beef tomatoes
- 1 tbsp olive oil
- Balsamic vinegar, for drizzling
- Grate the zest of 1 lemon and squeeze the juice into a bowl. Mix the zest and juice with the pork, oregano, ground spices, garlic and yoghurt, then leave to marinate for up to 2 hours. When ready, preheat your grill and cut the remaining lemons into 8 wedges. Thread 4 chunks of pork, 2 lemon wedges, 2 bay leaves and 2 chillies onto each skewer, and grill for 15 mins until lightly charred and cooked through.
- Brush the onion and tomato slices with olive oil and season well. Chargrill for 7 mins all over, and griddle the tomatoes for 3 mins until char-lined. Pile the tomatoes and onions onto serving plates, drizzle with olive oil and balsamic vinegar, then top with the pork skewers - perfect!
