Potato and Coconut Curry
- 1 tbsp oil
- 1 sliced onion
- 2 chopped garlic cloves
- 700g maris piper potatoes, peeled and cut into 2cm chunks
- ½ tsp turmeric
- 1 tsp garam masala
- 1 tsp nigella seeds
- Pinch of salt
- 200g peas
- 160ml coconut cream
- Chopped coriander
- Cook the onion and garlic in the oil for 3 mins, then add the spices and salt and fry for a minute or two more. Toss in the potato chunks and coat in the spiced oil.
- Tip in 250ml water and simmer for 20 mins. Stir in the peas and coconut cream, simmer for another 5 mins, then serve with plenty of chopped coriander and some cooked basmati rice, if you fancy.
