Potato and Coconut Curry

  • 1 tbsp oil
  • 1 sliced onion
  • 2 chopped garlic cloves
  • 700g maris piper potatoes, peeled and cut into 2cm chunks
  • ½ tsp turmeric
  • 1 tsp garam masala
  • 1 tsp nigella seeds
  • Pinch of salt
  • 200g peas
  • 160ml coconut cream
  • Chopped coriander
  • Cook the onion and garlic in the oil for 3 mins, then add the spices and salt and fry for a minute or two more. Toss in the potato chunks and coat in the spiced oil.
  • Tip in 250ml water and simmer for 20 mins. Stir in the peas and coconut cream, simmer for another 5 mins, then serve with plenty of chopped coriander and some cooked basmati rice, if you fancy.
