Prawn and Avocado Orzo

  • 300ml fish stock
  • 150g orzo
  • Splash of olive oil
  • 1 crushed garlic clove
  • ½ chopped red chilli
  • 200g raw peeled prawns
  • ½ lemon, zest and juice only
  • ½ avocado, cubed
  • Handful of rocket leaves
  • Simmer the orzo in the stock for 6-8 mins or until just tender. Drain and leave to cool. Add a splash of oil to a frying pan and fry the garlic and chilli for a minute or two, then add the prawns and lemon zest and fry for 2 mins more. Once the prawns are pink, stir in the lemon juice and a good grind of black pepper.
  • Toss the warm orzo with the prawns, and gently fold through the cubed avocado. Divide between plates and top with some rocket leaves to serve.
