Prawn and Cucumber Canape Skewers
- 20 cooked and peeled king prawns
- ½ lemon, juice and zest
- ½ tsp poppy seeds
- 1 tsp olive oil
- 1 cucumber
- xxMix together the prawns with the lemon juice and zest, the poppy seeds and the oil. Leave to marinate for 20 mins. x
- Peel 20 strips from the cucumber with a vegetable peeler, going the whole length of the cucumber to make a set of long ribbons. Thread each cucumber ribbon onto a short wooden skewer, weaving it back and forth to make a ruffled effect. Add a whole prawn to the end of each one, and serve chilled at a party or barbecue. Delicious!
