Prawn and Melon Salad

  • ½ ripe honeydew melon
  • 180g cooked and peeled king prawns
  • 2 sliced spring onions
  • ½ deseeded and sliced red chilli
  • 2 tbsp chopped coriander leaves
  • 1 lime, zest and juice
  • 1 tsp olive oil
  • Chop the melon into bite size pieces and place in a salad bowl with the prawns, spring onions, coriander and chilli. Stir to combine. Squeeze over the lime juice and toss in the zest, then drizzle with olive oil and toss gently before serving.
