Prawn and Prosciutto Skewers

  • 2 slices prosciutto
  • 16 big raw prawns, peeled and cleaned
  • 8 sticks of rosemary, leaves removed from all but the tip of the stalk
  • 1 tbsp olive oil
  • Salsa, to serve
  • Slice each piece of prosciutto into 8 equal pieces, leaving 16 in total. Wrap each piece of prosciutto around each prawn like a little blanket, then spear two wrapped prawns onto each rosemary stalk.
  • Brush the prawns with a little oil, then cook for 2 minutes on each side on a hot griddle pan or barbecue. Serve immediately with salsa and sides. Yum!
