Prawn Hot and Sour Broth
- 75g frozen king prawns
- 300ml veg stock
- 1 chopped spring onion
- 1 sliced red chilli
- 4 sliced white mushrooms
- ½ lime, juice only
- 1 tbsp Thai fish sauce
- 1 tsp demerara sugar
- Bunch of coriander leaves
- Defrost the prawns in a bowl of cold water for 10 mins. Meanwhile, bring the stock to the boil in a saucepan, and stir in the chilli, lime juice, sugar, fish sauce, mushrooms and the whites of the spring onion. Set the mixture to a simmer for 3 mins and season.
- Drain the prawns and add to the stock. Simmer for 2 mins or until the prawns are nice and pink, then pour the soup into a serving bowl and stir in the coriander leaves and green parts of the spring onion. Enjoy!
