Prawn Hot and Sour Broth

  • 75g frozen king prawns
  • 300ml veg stock
  • 1 chopped spring onion
  • 1 sliced red chilli
  • 4 sliced white mushrooms
  • ½ lime, juice only
  • 1 tbsp Thai fish sauce
  • 1 tsp demerara sugar
  • Bunch of coriander leaves
  • Defrost the prawns in a bowl of cold water for 10 mins. Meanwhile, bring the stock to the boil in a saucepan, and stir in the chilli, lime juice, sugar, fish sauce, mushrooms and the whites of the spring onion. Set the mixture to a simmer for 3 mins and season.
  • Drain the prawns and add to the stock. Simmer for 2 mins or until the prawns are nice and pink, then pour the soup into a serving bowl and stir in the coriander leaves and green parts of the spring onion. Enjoy!
