Prawn Satay Noodle Salad
- 250g egg noodles
- 130g crunchy peanut butter
- 3 tbsp chilli oil
- 2 tbsp soy sauce
- 1 lime, juice only
- 150g cooked king prawns or similar
- 1 grated carrot
- 1 bunch of coriander leaves, chopped
- 4 sliced spring onions
- Cook the noodles to pack instructions, then drain. Meanwhile, mix the peanut butter with 2 tbsp of water, and cook in a small pan for a minute or two to loosen and heat through. Add the soy sauce, chilli oil, and lime juice, whisk well to make a dressing, then toss in the noodles and spread on a serving platter.
- Top with the grated carrot, cooked prawns, coriander, and spring onions, and serve.
