Prawn Satay Noodle Salad

  • 250g egg noodles
  • 130g crunchy peanut butter
  • 3 tbsp chilli oil
  • 2 tbsp soy sauce
  • 1 lime, juice only
  • 150g cooked king prawns or similar
  • 1 grated carrot
  • 1 bunch of coriander leaves, chopped
  • 4 sliced spring onions
  • Cook the noodles to pack instructions, then drain. Meanwhile, mix the peanut butter with 2 tbsp of water, and cook in a small pan for a minute or two to loosen and heat through. Add the soy sauce, chilli oil, and lime juice, whisk well to make a dressing, then toss in the noodles and spread on a serving platter.
  • Top with the grated carrot, cooked prawns, coriander, and spring onions, and serve.
