Proper Cajun Chicken Breast
- For the Cajun Seasoning
- 3 tsp each ground cumin and smoked paprika
- 2 tsp each thyme and oregano
- 1 tsp each chilli flakes and garlic salt
- 1 tbsp olive oil
- 1 lemon, zest and juice
- For the Chicken
- 4 chicken breasts
- 4 sweet potatoes, cut into wedges
- 1 tbsp olive oil
- 2 tbsp sweet smoked paprika
- Salt and pepper
- Combine the ingredients for the spice mix and season well. Bash the chicken breasts until 2cm thick, then coat in the spice mix and leave covered in the fridge for 4 hours, or overnight if possible. When ready, preheat the oven to 200C, and shake off any excess spices from the meat.
- Toss the potato wedges in the oil and smoked paprika, then season well. Bake for 25 mins or until golden and tender. Meanwhile, heat up a griddle pan and cook the chicken breasts for 15 mins, turning once or twice until cooked through. Serve with the potato wedges and some salad.
