Prosciutto Melon Salad
- 100g sliced prosciutto
- ½ small melon, cut into small wedges
- 15g basil leaves
- 150g crumbled feta
- For the Dressing
- 2 tbsp olive oil
- 1 tbsp white wine vinegar
- 1 lemon, zest and juice
- 1 tsp clear honey
- Preheat the oven to 200C and place the prosciutto on a lined baking tray. Place a layer of baking paper on top, then weigh down with a second tray. Bake for 10 mins, or until the prosciutto is crisp and golden. Break into bite-sized pieces.
- Make the dressing by whisking the ingredients together in a small bowl. Add the melon to a serving platter, then scatter with the feta, prosciutto pieces and basil leaves. Season with black pepper, then serve with a good drizzle of the dressing. Perfect!
