Prosciutto Melon Salad

  • 100g sliced prosciutto
  • ½ small melon, cut into small wedges
  • 15g basil leaves
  • 150g crumbled feta
  • For the Dressing
  • 2 tbsp olive oil
  • 1 tbsp white wine vinegar
  • 1 lemon, zest and juice
  • 1 tsp clear honey
  • Preheat the oven to 200C and place the prosciutto on a lined baking tray. Place a layer of baking paper on top, then weigh down with a second tray. Bake for 10 mins, or until the prosciutto is crisp and golden. Break into bite-sized pieces.
  • Make the dressing by whisking the ingredients together in a small bowl. Add the melon to a serving platter, then scatter with the feta, prosciutto pieces and basil leaves. Season with black pepper, then serve with a good drizzle of the dressing. Perfect!
