Prosciutto, Tomato, and Melon Salad
- 500g quality mixed tomatoes, chopped
- 1 melon, chopped into chunks
- 12 slices of prosciutto
- Handful of shredded mint
- Crusty bread, to serve
- For the Dressing
- 1 tsp honey
- 3 tbsp olive oil
- 1.5 tbsp red wine vinegar
- Make the dressing by whisking all of the ingredients in a small bowl, then set aside. Toss the melon and tomatoes together in a bowl, season with some salt and pepper, and toss in a little of the dressing. Loosely lay the slices of prosciutto on a platter, then pile the melon and tomato mix on top. Drizzle with more dressing, scatter with mint leaves, and serve immediately with crusty bread.
