Prosciutto, Tomato, and Melon Salad

  • 500g quality mixed tomatoes, chopped
  • 1 melon, chopped into chunks
  • 12 slices of prosciutto
  • Handful of shredded mint
  • Crusty bread, to serve
  • For the Dressing
  • 1 tsp honey
  • 3 tbsp olive oil
  • 1.5 tbsp red wine vinegar
  • Make the dressing by whisking all of the ingredients in a small bowl, then set aside. Toss the melon and tomatoes together in a bowl, season with some salt and pepper, and toss in a little of the dressing. Loosely lay the slices of prosciutto on a platter, then pile the melon and tomato mix on top. Drizzle with more dressing, scatter with mint leaves, and serve immediately with crusty bread.
