Prosciutto-Wrapped Cheese with Melon Salad
- 6 thick slices of halloumi
- 6 slices of roasted red pepper from a jar
- 6 slices of prosciutto or similar
- ½ honeydew melon, deseeded
- 1 chopped red chilli
- Handful of mint leaves
- 1 tbsp white wine vinegar
- 1 tbsp olive oil
- Wrap each slice of halloumi in the pepper and prosciutto to make 6 parcels. Slice the melon, remove the skin and place in a bowl with the mint, chilli, oil and vinegar. Season and toss the salad together.
- Brush the halloumi parcels in a little oil and fry until golden all over. Serve the hot cheese parcels with the melon salad, and enjoy.
