Prosciutto-Wrapped Cheese with Melon Salad

  • 6 thick slices of halloumi
  • 6 slices of roasted red pepper from a jar
  • 6 slices of prosciutto or similar
  • ½ honeydew melon, deseeded
  • 1 chopped red chilli
  • Handful of mint leaves
  • 1 tbsp white wine vinegar
  • 1 tbsp olive oil
  • Wrap each slice of halloumi in the pepper and prosciutto to make 6 parcels. Slice the melon, remove the skin and place in a bowl with the mint, chilli, oil and vinegar. Season and toss the salad together.
  • Brush the halloumi parcels in a little oil and fry until golden all over. Serve the hot cheese parcels with the melon salad, and enjoy.
