Pulled Chicken and Hoisin Salad
- 1kg roasted chicken
- ½ red cabbage, sliced
- 3 grated carrots
- 5 sliced spring onions
- 2 red chillies, sliced
- Small bunch of coriander, chopped
- 2 tbsp roasted peanuts, crushed
- For the Dressing
- 1.5 tbsp toasted sesame oil
- 3.5 tbsp hoisin sauce
- Combine both the dressing ingredients in a small bowl and set aside. Pick all of the meat from the roast chicken, and shred it into large chunks. Toss into a salad bowl along with the spring onions, cabbage, carrots, half the coriander and the chillies. Toss with the dressing, pile onto a serving platter, then scatter with the peanuts and the rest of the coriander.
