Pulled Chicken and Hoisin Salad

  • 1kg roasted chicken
  • ½ red cabbage, sliced
  • 3 grated carrots
  • 5 sliced spring onions
  • 2 red chillies, sliced
  • Small bunch of coriander, chopped
  • 2 tbsp roasted peanuts, crushed
  • For the Dressing
  • 1.5 tbsp toasted sesame oil
  • 3.5 tbsp hoisin sauce
  • Combine both the dressing ingredients in a small bowl and set aside. Pick all of the meat from the roast chicken, and shred it into large chunks. Toss into a salad bowl along with the spring onions, cabbage, carrots, half the coriander and the chillies. Toss with the dressing, pile onto a serving platter, then scatter with the peanuts and the rest of the coriander.
